Our Sauvignon Blanc fruit is grown on south easterly facing, lower sloping block, known as "Davey's" Block. The climate stays slightly cooler and milder then our higher hilltop vineyards. The 2019 vintage was a truly amazing; the fruit reached perfect physiological ripeness retaining natural grape acidity resulting in very balanced wines with low alcohol and rich concentrated varietal flavors. Fermentation was carried out primarily in stainless steel and matured in a combination of stainless steel tanks and neutral French oak barrels for just under six months. The wine was bottled in February 2020.
The finished wine exhibits aromas of juicy fruit, lime zest, baked candied grapefruit with hints of fig and vanilla. The wine is bright and tight with luxurious and harmonious persistence. The ripe rich Semillon complements the tight structure of Sauvignon Blanc. In the mouth the wine portrays the minerality of our soils with rich fruit balanced by tart crisp acidity. Pairs well with grilled fish, shellfish, roasted herbed chicken, and goat cheese.
