Our Sauvignon Blanc fruit is grown at the front of our property along with a south easterly facing, lower sloping blocks where the climate stays slightly cooler and milder then our higher hilltop vineyards. The 2017 vintage was a true reflection of our potential; the fruit reached perfect physiological ripeness retaining natural grape acidity resulting in very balanced wines with low alcohol and rich concentrated varietal flavors. Fermentation was carried out primarily in stainless steel and matured in a combination of stainless steel tanks and neutral French oak barrels for just under six months. The wine was bottled in February 2018 and released soon after.
The finished wine exhibits aromas of citrus and tropical fruit with a hint of fresh apple blossom, fine oak, and pear. In the mouth, the wine is bright and tight with luxurious persistence. The ripe rich Semillon complements the tight structure of Sauvignon Blanc. In the mouth the wine portrays the minerality of our soils with hints of plantain, lemon zest and grapefruit, a bit of freshly cut grass and a touch of vanilla. The finish is crisp, elegant, and fresh. There are exotic white flower notes in the empty glass. Pairs well with grilled white fish, shellfish, roasted herbed chicken, and goat cheese.
